This morning we had leftover oatmeal or leftover rice for breakfast. Dai had some of both and then apricots canned by Larry. Cressida ate half her rice and Phyllis ate all her rice and wanted applesauce but her time was up. I ate some oatmeal but then Dai wanted more so I gave her most of my bowl.
For lunch Cressida and I had pinto bean soup with toast. She ate it, an improvement over last night. Actually Cressida had bread and butter not toast. This loaf of wheat challa is higher portion wheat than usual but still quite good. I have only eaten it as toast so no biggie to me.
Dai and Phyllis had PBJ muffins, dried apples (from the cannery), prunes, applesauce and Phyllis also had almonds. Both took Halloween candy as a dessert. Phyllis had to finish her prunes and almonds after school. For after school snack they had peanuts. I bought a big of them still in the shell, salted a long time ago. We only have a few cups left now.
Phyllis actually said she didn't want it but when I told her that was it so that or nothing she had some. Right before Phyllis went to gymnastics I gave her a couple bites of brown rice that didn't get eaten with breakfast and half a bolani (also bought a few months ago.)
For dinner we had black beans over rice with fried eggs on top. Dai calls it "black bean layers." When she heard we were having that she just about did a cheer. She finished her first bowl in record time. I am also serving it with mixed veggies from frozen. Oh, and it is over white rice.
We also have a ton of leftovers. We were supposed to have shredded Cuban beef but i forgot to thaw the meat so I got it out today and we can have that tomorrow. Then maybe we will not have Thursday's meal since we will have lots of leftovers.
I have tried a few different black bean recipes. Tonight I used one as a base and tinkered with it. I think it is great. I added molasses but otherwise used their ingredients just in different proportions.
We will have chocolate kettle corn for dessert - or Dai might have her Girl Scout candies she got.
