Breakfast: Jason and Cressida had oatmeal made by me. Dai and Phyllis had eggs made by themselves.
Lunch: Cressida had a peanut butter and honey sandwich with CSA cherry tomatoes, apples, and prunes. Dai and Phyllis had two boiled eggs, pretzels, apples, cucumbers and a nectarine (in a container so it wouldn't get squished.) They also each had a cookie from the slumber party batch - I am not a fan. Jason had a nectarine, an apple and two boiled eggs. I ate an egg burrito.
Dinner: Cobre Valley casserole and a tomato basil salad with oil and balsamic vinaigrette on top.
Prep ahead: Cut up CSA broccoli for lunches. Pressure cooked the CSA beets. Roasted the CSA peppers from this week and last. Made blistered peppers using the CSA padrone peppers. (And they are pretty good which I feel lucky about. I also feel committed to cooking what we get, which thankfully this week was a little light.) Made shredded pork taco meat n the crockpot.
